Maybe the legs would taste like lobster? Different places on the body probably wouldn't taste that different from each other, mostly just having different textures and usually being seasoned differently (with the obvious exception of things like skin tasting different than muscle).
I would say more like some kind of mammal, cuz it is kind of mammal idk? Mostly taste of animals is defined by what their organism produces and consumes
I imagine that when cooked properly, its legs would taste like boiled crab while the main meat from toe body would be a mixed taste of crab and steak (and you'd impress gordon ramsay with it as well).
