yeah, they eat humans head and then assimilate them, for example, all of the regular headcrab zombies have a big mouth on their belly and long sharp fingers just like the headcrab themselves. I discovered this when playing hl2, seeing different kinds of headcrabs and their corresponding zombies have similar behaviors and looks.
